How can I hide a particular field from the customer and make it visible only to agents?

To hide a ticket field from the customer alone, please navigate to Admin -> Workflows -> Ticket Fields -> [Concerned Ticket field]


On the dialogue box that opens and gives you the properties, uncheck the option that says 'Display to Customer.'
