If I delete a ticket field will all previous entries that have that field be deleted?

We will be replacing the older version of Freshdesk with the new Mint experience on January 31, 2019. All your data and configurations will remain intact. Switching back to the old Freshdesk will not be possible.

Yes, if a ticket field is deleted all the values for that field will also be deleted as well. Therefore before deleting the ticket field create the new field and make use of the Supervisor rule to assign the new field values to the tickets.
Once the field is created go to Admin > Supervisor > New Rule > Create a rule in which if the tickets have the previous field's value, then the new field is replaced accordingly.
