You can remove the ticket fields from Admin--> Ticket fields section. However, before removing the ticket fields, filter the tickets on those statuses and add a tag using the Bulk action in feature in the Ticket list view page. The reason for the same is because once the fields are deleted the data would not be present in the ticket as well.
I am trying to remove and add new categories for tickets.
